A long table beneath the subtropical trees, an evening outdoors, and the chefs and sommeliers of the precinct cooking and pouring side by side. Familiar faces from SK Steak & Oyster, Hellenika, sAme sAme, Bianca, Lobby Bar, Cru Bar, The Standard Market Company and The Calile will come together for the night.

The evening unfolds as a degustation-style dinner. Courses arrive one by one, each introduced by the chef or sommelier behind it. Seafood and meat are shared throughout, alongside seasonal produce from the rooftop and wines paired and poured alongside each course.

Sea Forest sits at the heart of the evening. The beef and dairy served on the night comes from producers using SeaFeed based on Asparagopsis – a native seaweed cultivated by Sea Forest that’s helping to reduce methane emissions in livestock. All proceeds from the dinner support the Sea Forest Foundation and its work restoring kelp forests along Tasmania’s coastline.
