Now, the Sushi Room cadre is hard at work preparing to unveil a stunning new extension. Transforming a neighbouring shopfront on the ground floor of The Calile Hotel, the expansion will see Sushi Room’s entrance relocated to Doggett Street and the introduction of an alfresco dining area with brushed-steel furniture lining the sidewalk.

AO Reserve – The New Hospitality Experience Coming To The Australian Open

Join us for an evening of passion, craft and exceptional produce, as two of the country’s leading steak restaurants come together to celebrate the art of exceptional beef.

Established in 1876, Victor Churchill began its life as a retail butcher shop in Woollahra, Sydney, where it quickly earned a reputation for uncompromising quality and craftsmanship. The Puharich family, led by Anthony and his father Victor, a fourth-generation butcher, acquired the historic store in 2009 and elevated it to global acclaim, opening a retail store and restaurant in Melbourne shortly thereafter. Victor Churchill has since become one of Australia’s most distinctive dining destinations, blurring the lines between fine cuisine and artisanal butchery. The restaurant’s meat-forward menu showcases exceptional produce and celebrates butchery as an artform – a stage where quality, theatre and tradition converge.

Over their years working together, Simon and Anthony have built a strong relationship, united by a shared ethos of uncompromising quality and a commitment to working with only the best. This mutual respect and dedication to excellence has naturally led them to collaborate on this rare dining experience, celebrating their passion for world-class beef.

The evening's menu will place beef at the forefront, skillfully weaving elements into each course. Guests will have the opportunity to taste a selection of cuts direct from the Victor Churchill butcher’s block, showcasing beef from O’Connor, Rangers Valley and Stone Axe, as well as an array of dishes never before seen on the SK menu. Anthony Puharich himself will guide guests through the experience, offering insight into the provenance and preparation of each dish from pasture to plate.

Available for one month only, the Grey Goose Tiny Tinis are perfect for the curious or the indecisive, offering the ritual of a cocktail without the full pour.

At first glance, SK's Tiny Tini presents with the crisp, clean silhouette of a classic martini, but beneath that clarity lies a defining difference. We fat-wash Grey Goose vodka with rendered Kiwami beef fat and Ars Italica white sturgeon caviar, then allow it to rest for two days. The result is a spirit that retains the martini's clarity and structure while delivering a savoury, umami-laced undercurrent - a depth and richness that quietly assert the essence of SK.
