Set in a custom-built dining room inspired by our home at The Calile Hotel, The Bistro is a proud translocation of SK’s beating heart. Australian Open 2027 with SK Steak & Oyster

In 2027, Sushi Room will once again partner with AO Reserve to distinguish On-Court by Piper Heidsieck as the tournament’s most exclusive VIP experience. In a private suite discreetly nestled beneath the arena, guests will surrender to the mastery of Head Chef and sushi master Shimpei Raikuni for a curated omakase experience rooted in artistry, trust and anticipation. 

With limited seats per session, the intimate experience will see Shimpei guide guests through 12–15 courses, sharing his craftsmanship as he meticulously prepares each dish. Complemented by Piper-Heidsieck champagne, a premium wine selection, a private chauffeur service and unparalleled access to the Grand Slam action with courtside seats in Rod Laver Arena, On-Court is designed to elevate every moment of the Australian Open experience.

Join us on Sunday April 26 for an evening celebrating the depth and diversity of modern Greek wine, in partnership with Déjà Vu Wine Co. Across the night, we’ll be pouring wines from six of the country’s most acclaimed modern producers – traversing Santorini’s dramatic volcanic soils through to historic mainland vineyards – including Estate Argyros, Douloufakis Winery, Gaia Wines, Ktima Gerovassiliou, Apostolos Thymiopoulos and Domaine Zafeirakis.

One Night, One List – Entirely Greek

Join us at Sushi Room for an intimate experience with one of Champagne’s most revered Houses, celebrating the artistry and individuality of Maison Krug.

Held in Sushi Room’s private dining room – an intimate setting defined by deep red tones and low, atmospheric lighting – and limited to 11 seats, expect an evening of considered detail, thoughtful conversation and a shared appreciation for craft.

An Evening with Olivier Krug offers a rare opportunity to step inside the world of the historic House and explore a collection of Champagnes rarely experienced together. Known for his warmth and charisma, Olivier, sixth-generation of the Krug family and Director of the House, brings Krug’s history to life with a perspective shaped by both heritage and innovation, extending the experience beyond the glass.

A refined, multi-course menu will unfold across the night, each dish carefully composed to sit in dialogue with a selection of Krug Champagnes. Each pairing is designed to reveal something unexpected in both the wine and the plate, exploring the interplay between texture, umami and effervescence.

Join us on Sunday April 12 to celebrate Orthodox Easter the Hellenika way – with generosity, time-honoured recipes, communal dining and heartfelt Hellenic hospitality.

Priced at $110 per person, our special banquet menu honours the dishes that connect present generations to thousands of years of tradition, including spit-roasted lamb and hand-dyed red eggs, to be cracked amongst guests in a ritual symbolic of renewal. Served in courses, dishes are designed to be shared across the table with those who mean most.

For one day, our terrace bar will transform into a Greek plateia, playing host to three souvla grills – a nod to the village celebrations of the motherland, where the unhurried preparation of the feast is deeply rooted in tradition and spiritual connection.

A long table beneath the subtropical trees, an evening outdoors, and the chefs and sommeliers of the precinct cooking and pouring side by side. Familiar faces from SK Steak & Oyster, Hellenika, sAme sAme, Bianca, Lobby Bar, Cru Bar, The Standard Market Company and The Calile will come together for the night.

The evening unfolds as a degustation-style dinner. Courses arrive one by one, each introduced by the chef or sommelier behind it. Seafood and meat are shared throughout, alongside seasonal produce from the rooftop and wines paired and poured alongside each course.

Sea Forest sits at the heart of the evening. The beef and dairy served on the night comes from producers using SeaFeed based on Asparagopsis – a native seaweed cultivated by Sea Forest that’s helping to reduce methane emissions in livestock. All proceeds from the dinner support the Sea Forest Foundation and its work restoring kelp forests along Tasmania’s coastline.

Considered to be one of the world’s most innovative and forward-thinking bars, Line has built its reputation on a profound understanding of flavour and an enduring respect for the fermentation process, imbuing depth and identity in each serve. The evening promises a vibrant dining experience that honours both innovation and heritage, thoughtfully pairing world-class tequila with favourites from Hellenika’s à la carte offering and dishes inspired by the Line Athens menu.

Established in 1876, Victor Churchill began its life as a retail butcher shop in Woollahra, Sydney, where it quickly earned a reputation for uncompromising quality and craftsmanship. The Puharich family, led by Anthony and his father Victor, a fourth-generation butcher, acquired the historic store in 2009 and elevated it to global acclaim, opening a retail store and restaurant in Melbourne shortly thereafter. Victor Churchill has since become one of Australia’s most distinctive dining destinations, blurring the lines between fine cuisine and artisanal butchery. The restaurant’s meat-forward menu showcases exceptional produce and celebrates butchery as an artform – a stage where quality, theatre and tradition converge.

Over their years working together, Simon and Anthony have built a strong relationship, united by a shared ethos of uncompromising quality and a commitment to working with only the best. This mutual respect and dedication to excellence has naturally led them to collaborate on this rare dining experience, celebrating their passion for world-class beef.

The evening's menu will place beef at the forefront, skillfully weaving elements into each course. Guests will have the opportunity to taste a selection of cuts direct from the Victor Churchill butcher’s block, showcasing beef from O’Connor, Rangers Valley and Stone Axe, as well as an array of dishes never before seen on the SK menu. Anthony Puharich himself will guide guests through the experience, offering insight into the provenance and preparation of each dish from pasture to plate.

At first glance, SK's Tiny Tini presents with the crisp, clean silhouette of a classic martini, but beneath that clarity lies a defining difference.
